I am trying to build a cute tiny water fountain that might require coding to control water flow.
I am using this tutorial (https://www.youtube.com/watch?v=EOnhLrAKLFo&list=PLbYnZIzA_AI65hGoL3DDUgnJV1lDfzWBE&index=59 ) and electronics to make that fountain. The thing is, I would like to have it detect the distance and control the water flow regarding the distance (e.g., the closer distance, the bigger flow). Any recommendation for a smarter water pump/tutorial/code is appreciated.

Welcome to the forum.
Put the ultra sonic unit in the base pointing up, so it detects the distance to the bottom of the container.

I take that to mean that the distance here refers to the distance of a person to the water feature. In which case you need a distance sensor to detect how far some one is away from the water feature. I would use a TOF (time of flight) distance sensor to to this.
The thing about using an ultrasonic sensor with a water fountain is that a lot of ultrasonic noise is generated by falling water. Just try pointing a bat detector at a fountain to hear this noise.
