Hi all,
I bought some HX711 board (https://it.aliexpress.com/item/32848866947.html?spm=a2g0s.12269583.0.0.51606d0d6wzhdk) and I want to enable the 80 Hz read on it.
Anybody can tell me how can I enable it without soldering/desoldering? I see that this type of board has a "rate selector" on the back.

Cut away the thin (copper) line between the two 'rate' solder rectangles with a sharp blade.
Note that accuracy goes down when you try to do things faster.

One info: if I put a drop of solder between the two rectangles to connect them so I have the possibility to come back to 10 HZ could also work?

Yes.
Shorting the two rectangles with a blob of solder grounds the rate pin of the HX711 again,
and brings it back to 10Hz.

Sorry, I'm a noob with this, I don't understand how it works...
Current standard (not connected rectangles) rate is 10 SPS.
If I cut like in image attached (so the the two rectangles will be connected) the rate will go to 80 SPS right?
If I put a blob between them I'm still connecting them right?
If I'm connecting them I think it goes 80 SPS in any case.
Sorry if it is a dumb question, but I think I'm losting some infos here

Currently the rectangles are connected, I need to cut vertical (like number 2 in that image: https://drive.google.com/file/d/0B6EJw4qqWJOmNVdCYTJ2UHA2dE0/view) between them to disconnect it. So when I put the blob they're reconnected toghether, is it right?

Yes.
The rectangle on the right is ground, the one on the left is the rate pin of the chip.
The pin is normally connected to ground with a very thin copper trace between the rectangles (look closely).
You just cut that very thin line between the rectangles to disconnect the pin from ground.
A blob of solder, big enough to cover both rectangles, can restore the connection to ground again.
