very tricky this because the transfer characteristic of the LED and sensor in the opt coupler is very non liner.
I did try this with converting a colour TV into a monitor in the days you couldn't buy colour monitors and I never found anything that would do.
No doubt it is possible but it is not as easy as you think it might be.
What are you trying to measure?
The best way of doing difficult stuff, is to find a different, easier, way!
You can buy "linear" optocouplers that transfer analog voltages across an isolation barrier, like the Vishay IL300.
I'm just interested in measuring AC voltages, however these will be derived from >50V supplies, so I'd prefer to have some form of protection.

How about a small 1:1 transformer. For example from www.signaltransformer.com
That would isolate you from getting a shock from just touching the hot side of the ac source.
