Please do a Google search for RS-485, It will show you the type of signal for RS-485 and it is NOT suitable for what you are attempting.
If you have a pair of MAX485 devices, one in permanent TX (the end generating the PWM signal) and the other in permanent RX (the LED end), then I can't see an issue. As far as I can tell, you're just using a pair of differential line driver/receivers to transfer a 1 or a 0 over a distance.
You may need additional circuitry to drive the MOSFET from the output MAX485 RO pin.
The MAX485 does not care about the nature of the signal, only the logic level is of interest. @markd833 explains the usage of line drivers for digital signal transmission in #3.
I missed that he was using an adapter at each end of the wires.
