Relay Switching with Temperature Control

I am working on a project for school. The goal is to use thermocouples to measure temperatures. The measured temp will control whether or not the lightbulb is turned on. The components used will be an Arduino Uno, K-Type Thermocouple, AD8495 Analog Amp, and a relay module.

The relay will control 120 Vac to the light bulb. The following schematic was created.

I do not have any code or logic created yet. I am looking for advice and feedback on different components, schematic construction, etc.

  1. Would a digital output amp be easier to use, such as the MAX31855. Which provides easier coding/use.
  2. If used in a 120Vac/20A environment, what could be done to potential curb EMI in the thermocouple.
  3. What advice do you have in terms of improving this schematic?
