Does anyone know how to get the readout to get under eachother instead of printing along the screen?
You need to change some/all of your Serial.print() statements to Serial.println().
As serial monitor is scrolling I think Your printout is excellent, showing 3 times as many samples as Your proposal will do.
In your IDE, TOOLS >> Serial Monitor. In the lower-right of your IDE Serial Monitor window, click the drop-down menu and select New Line.
