Some Arduino - DMX interface advise needed

I am building a DMX controlled switch pack for use in theaters and live events. The current one I have built uses an off the shelf DMX 9 amp, 8 channel relay board that in tern operates eight 30 amp 240v relays to switch various loads, on or off. The issue I have is that all the off the shelf DMX boards I can buy only allow you to set a DMX start address for channel 1 and then the next 7 channels follow on from that. What I want to be able to do is allocate each channel it's own DMX address and I want to do that via USB and a simple program that I can run from a lap-top. Does anyone know of anyone who has done something like this? I am an experienced electronics engineer but I haven't used Arduino for a while now so I will have to re-learn some stuff. Thanks in advance.
