'Tools' > 'Processor' option missing in 1.8.19

I've just updated to 1.8.19, and the first thing I notice is that I can't upload to half my boards because I can't select 'old bootloader' any more. In fact, the whole 'processor' option is missing. It used to look roughly like this:

Does anyone know where/why it's gone, please?

In the second screenshot you have a Uno selected rather than an Arduino Pro or Pro Mini
