Trash the obsolete ULN2003, particularly if using the 5 V version of the stepper as it loses well over one Volt anyway.
Use a TPIC6B595, controlled by three Arduino pins, for two motors per TPIC. If you wanted more, they can be chained on the same three pins.
Yes, the Arduino pins can drive several ULN2003 chips without problems.
You should power the motors from a separate 5volt supply.

The losses of an ULN2003 darlington array is ok for these steppers.
The motors can get rather hot when driven dual coil and the full 5volt.
