would the arduion UNO be my best bet to use with Stepper motor NEMA 17
for my above stated project, moving tray back and forth..

Short answer YES.

You should be aware that a NEMA motor has specifications that should be adhered to.
They can be decoded using the full nema number that is stamped on them.
You will also need a DRIVER of some description and a power supply to match the motor.

You didnt give us too much to work on so I wont go into specifics as there are multiple sources and applications all over the internet.

Be aware that many cheaper NEMA motors are not closed loop so if it misses a step due to incorrect configuration it will not return to its exact start position unless you add additional components in the form of a stop switch or similar. That step is quite easy to do.

I gave away an R1800 because the ink was so expensive.

The guy who got it was going to use it - the best I might have done was strip it for 2 or 3 parts.
