I'm trying to make a box out of aluminum sheet metal that can detect weight with a load cell. I'm not exactly sure how I would go about installing the load cell into the box.
What's the best way to install a small load cell into a small box of aluminum sheet metal?

The box or something placed on the box?
A load cell has to be permitted to flex, that is how it works. So the thing doing the weighing has to move interdependently of the box.
I'm trying to detect the weight of something on top of the box, not the box itself. So the load cell will be in the box and should be able to detect a change of weight on top of the box.
You will have to mount the load cell such that it bends when the weight is placed on the box.
You could do something like the Wii fit and have the feet of the box flex by pushing up inside the box slightly.
But what ever the weight of the box will be measured as well. You have to remove that in software with a sort of tare function.
