Which analog amplifier should I use with 3-wire load cell

Hello,
my body scale stopped working some and I would like to use the load cells in my project.
There were 4 of them, each one in one corner (connected to the unindetified pcb with unidentified black chip). The cells have 3 wires. I managed to trace the paths on the pcb, so I know which wire was ground, which one power and which one lead to the unidentified chip.

I connected the power wires and the third one to analog input, but no matter how hard I press, the value is always 510-511. So I will propably need something more accurate than the 10-bit adc. Which one do you recommend? Or does it works differently?

Also, how accurate is it going to be? The scale had maximum range about 150kg, with one decimal point resolution, so one load cell will propably measure to range of max ~40kg. Will I be able to use it to measure how much liguid was poured into the glass? Let's assume 500g glass + platform, so it would be great to measure with 1g presicion in range 0-1000g, but I'm a bit pessimistic about this.

So, How to get the 3-wire load cell working, and it's not going to be accurate enough, how accurate is going to be this load cell with HX711?
