I think ambient interference is playing a big part in disturbing the readings
Sounds very plausible - the one time I had my pulse checked by a similar device, I had to put a finger into a plastic tube with the sensor at the end.

I found out that Matlab supports arduino!
This has been excellent for my project as i can read the signal, plot graphs and work out the frequency that way. Still in progress though - not getting accurate reads, seem to be missing some pulses.
