I have been saving hourly weather data for a bit over 3 years to a dB, from there, it's easy to use some program, like a spreadsheet program, to plot the data. My 13 ESP32's send their data to a MQTT Broker running on a RPi. The RPi put the MQTT data into a database for storage.
