From what I see everything you want to do and more can be done with any of the arduino's even the basic Uno/Nano should be more than enough to handle all of that easily.
All vehicle's are known to have very noisy electrical systems so you will want to look at protection circuits to keep from frying your micro.
The RP2040 is a very new chip I don't know what if any of the display libraries are compatible with it at this time. Maybe someone else can chime in on that one.
Interrupt's are not needed for simple buttons. Polling the switches in loop() is the recommended method.
