I have these squared force sensitive resistors, generally when I apply pressure to them with the fingers they detect pressure correctly, but sometimes I read datas like "900", "1000",ecc... in the serial monitor, when I'm not even touching them that much. It seems to give me this problem more often when I touch the black edges.
Could be a welding problem?

How do you have them conneced to your Arduino?
I've connected them like this but to an arduino nano rp2040 connect, so instead of the 5v I'm using the 3.3V. The resistors I'm using are 1K ohm. On internet they suggest to use those squared force sensitive resistors with 10k ohm resistors, but I decided to use the 1k ohm ones anyways because I don't have the option to change them.
I tried to separate with a sheet of paper those 2 welds and now it works, so maybe that was the problem
They work best with 10K. You will get a much greater range a values with a 10K.
Many cheap solderless breadboards are well known for having bad and intermittent connections.
Make sure the connections are nice and tight not loose or can wiggle.
It looks and sounds like you need to brush up on your soldering technique
