I have a temperature probe that I don't know the name of. The only thing I know about it is that it has 2 wires. I don't really know ho to read temperature with it. Can you help?
That's a thermocouple .

You need to identify the thermocouple Type first
red and green wires is "C" Type, which , unfortunately appears to be a rare type.
Haven't found any C-Type amplifiers.
You may be out of luck.
I suppose you could add an amplifier and put the lookup table in an EEPROM
That is a high temperature thermocouple. Unless you need it I would suggest getting something different. You can build an amplifier for it and do your own cold junction compensation with some electronic circuitry and or micro (arduino) doing the compensation for you. Check Maxum, they did a lot with thermocouples.
