I have no idea what the thread starter is looking to do? Meter Temp of what? Coolant, cylinder head(s) maybe EGT (Exhaust Gas Temp). I have no idea what they want other than someone to write code.

No, sorry I can't write code for you. You have not provided any information. I have no idea how you want to use an Arduino, let alone which Arduino since you make no mention of which Arduino. I have no idea what that truck uses for a temperature sensor. Finally what is the scope image for? Did you bother to read the link I posted on how to get good help? Nobody can offer help less you explaining your project in detail.

I count 4 what looks like thermistors sensing Inlet Air sensing (two of them), water temp one of them and lastly furl temperature one of them. So two of four are in fuel and water. All four look to be thermistors.

If I wanted to measure any of those 4 parameters I would likely just use 4 added sensors like a DS18B20 temp sensor with two in open air applications and two in a housing to measure fuel and water. Yes, a DHT sensor can be used for air.

2. DS18B20 TO-92 3 Pins Wire Digital Thermometer Temperature IC Sensor

This or try and tap into the ECU sensors path which I would be more reluctant to try. Two of the four temperatures there is no control over maybe three of four. The only possible control would be engine coolant temperature and that is a function of the ECU.
