What is the difference between "ArduinoISP" and "Arduino as ISP" in the Tools menu? I tried Googling, to no avail.
I am using an Arduino Pro Mini, IDE v1.6.1 and I uploaded Randall's ArduinoISP sketch.

Arduino As ISP is the one you want.
There is also a device called ArduinoISP - which is different from the ArduinoISP sketch.

The correct AVRDUDE parameter for programmer type would be "arduino" and not "avrisp"?
