Tiny thermistors/temp measurement -waterproof

I need to measure somewhat accurately (min. half degree f accuracy) temperatures of live oysters (read saline environment,).would like to measure outside temp of the of shell vs. interior temp (oyster meat). I think i need to measure six oysters, outside shell temp, and six interior temps (12 temps). the readings for the interior (inside the shell of the oyster) , dictates that we drill, or somehow implant a very small thermistor or temp monitoring device into a live oyster. These oysters will be in an already harvested state in bags or boxes. Im trying to measure the differnce between using ice covered oysters, vs refridgeration, and cool down rates.
I am not a paid consultant or engineer for this particular project . I am director of a port commission in Louisiana ,and just trying to help out our local seafood producers . I am, however quite familiar with arduino implementation, and have built numerous project, but mainly motor, and stepper motor control type projects.

  1. Looking for small, (thinnest possible to insert into the oyster body), temp measurement devices suitable for (easy) arduino interfacing.
    Most of my projects have utilized Uno's but I do have a mega or two around.
  2. would like to include data logging and possibly real time readout (lcd or other) of all 12 temps.
    Whew . I know Im asking alot, but any help appreciated.

I Googled "small medical temp sensor".
Plenty to choose from.
