Exercise Bike Monitor interface

Hi,

I'm a newbie and enthusiast of DIY Arduino Projects and I need a new way to motive myself to do exercise. So, I wondering if there is a way to connect an Arduino with a monitor bike like the one shows in the attached pictures to send the information via MQTT or/and a little Oled display?
The device's manufacturer is the taiwanese company Chang You and had similar devices like this: SM Series - Chang Yow
